chili, citrus & garlic honey.

Ingredients:

  • 1 cup (340g) raw unpasteurized liquid honey.

  • 1 tbsp filtered water.

  • 1 orange/clementine/lemon, or any citrus, peel only.

  • 1 tsp coriander seed, toasted.

  • 12 cloves garlic, lightly crushed.

  • 3 whole chilies, sliced thin.

Equipment:

  • vacuum pack machine & bags.

  • sterile container.

Execution:

  1. ferment.

  • Add the garlic, chilies, citrus and coriander seeds to a sterile container, cover with honey and add the water, stir to combine.

  • Cover with a lid and store at room temperature away from sunlight for 2-4 weeks or until the desired aroma and taste has been reached.

3. use.

  • Use in a marinade or glaze for grilled meats and vegetables.

  • Add on top of sandwiches, salads, rice bowls, etc.

  • Add onto charcuterie boards.
